Mel’s Outrageous Chocolate Chocolate Chip Cookies

Mel’s Outrageous Chocolate Chocolate Chip Cookies
“Would you mind if I licked the bowl?”
Makes 24 cookies

  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 1 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup semisweet chocolate chips
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips. Divide into 24 equal round balls and place on a baking sheet.
  3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

3 Tier Chocolate Cake with Mocha Frosting

Cake

  • 2 cups boiling water
  • 1 cup (8oz?) unsweetenened chocolate
  • 1 cup water
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/4 cups white sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  1. preheat your oven to 350°F.
  2. grease 3 9″ round cake pans with butter.
  3. melt your chocolate over a double boiler, be sure it doesn’t burn, then let it cool.
  4. mix together flour, baking soda, baking powder and salt.
  5. in another (bigger) bowl, mix butter and sugar together.
  6. beat in eggs one at time, then add vanilla.
  7. add the flour mixture alternately with the chocolate.
  8. spread batter evenly between the 3 prepared pans.
  9. bake in preheated oven for 25 to 30 minutes. Allow to cool.

Frosting

  • 1/2 cup butter
  • 3 (1 ounce) squares unsweetened chocolate
  • 1 pound confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup coffee/milk (brew 1 tb coffee into the milk)
  1. melt chocolate and butter in the a double boiler.
  2. in a large bowl, combine confectioners sugar, vanilla and milk.
  3. frosting will thicken as it cools.
  4. put the cake together!

makes 1 9″ cake. enough for a large party.
